the overly manly-man Father's Day cake.
so i made this for Father's Day tomorrow, and i know i know, it's pink. but i really wanted to incorporate strawberries somehow. I DID run it by my dad first and he reassured me as long as he got to eat it, he didn't care what color it is. :) so it's pink. and it's naturally pink - no food coloring. yay!
*disclaimer* i haven't tried it yet. i'm just posting it because i made it. well, i've had the buttercream... i kind of ate all the extra i had. (it was amazing. a bit to sweet for me, but i'm not really fond of sweet stuff.)
White Cake Recipe
½ cup shortening or ¼ cup unsalted butter
1 cup granulated sugar
1 teaspoon clear vanilla
2 teaspoon almond extract (or more)
2 cups sifted all-purpose flour minus 1 Tablespoon
1 Tablespoon baking powder
1 Tablespoon of cornstarch
Pinch of salt
½ cup + 2 Tablespoons milk (135 ml)
4 egg whites
Beat the shortening/butter and sugar until light and fluffy, about 3 minutes.
Add the extracts and beat for a minute. Add the flour mixture alternating with the milk, beginning and ending with flour. Stir until just combined.
In another bowl beat the egg whites until foamy and fold into the flour and shortening mixture in two parts.
Divide the batter into pans. Bake for 20-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool on wire racks until slightly cooled, flip cake to serving plate. Cool completely before frosting.
1 cup of unsalted butter (2 sticks)
1 cup of strawberries, puréed
4 cups of powdered sugar
Cream the butter until smooth.
Add the strawberry purée and mix until thoroughly combined.
Gradually add the powdered sugar until all is incorporated.
Then beat on high until fluffy, about 2 minutes.
Adjust the powdered the sugar if needed for the right consistency.
decorate it how ya want... [i haven't decorated mine yet.] enjoy!
